Instant one pot kootu

INGREDIENTS

  • CHOW CHOW CUBED   – 1 CUP
  • GREEN GRAM DAL  –  1/2 CUP
  • SLIT GREEN CHILLY – 2
  • RED CHILLY – 1
  • ASAFOETIDA  – 1/4TSP
  • SAMBHAR POWDER  – 1 TSP
  • COCONUT OIL – 1 TSP
  • MUSTARD SEED – 1 TSP
  • BLACK GRAM DAL  – 1 TSP
  • BE GAL GRAM DAL  – 1 TSP
  • CURRY LEAVES  –  FEW
  • CHOPPED CORIANDER LEAVES   –  1 TSP
  • SALT – TO TASTE

METHOD

  • Cook dal and the vegetable till soft with a pinch of turmeric powder in 2 cups of water.
  • Add the required salt, green chilly and sambhar powder and bring to a boil, till the kootu is thick enough in consistency. Temper in coconut oil with mustard, dals, red chilly asafoetida and curry leaves.
  • Serve with hot rice

NOTE

  • This can be made with Ash gourd, bottle gourd, cabbage and ridge gourd.
  • This simple kootu requires minimal effort but is delicious with hot rice or as an accompaniment to pepper rasam, vathakuzhambu or menthiya kuzhambu.
